Potato Omelette

Origin: Spain

Ingredients:

  1. Egg – 6 medium
  2. Potato – 3 large
  3. Onion – 2 large
  4. Green Peppers – 2 medium
  5. Oil – 6 tablespoon
  6. Salt – 1 tablespoon

Recipe:

  1. Clean, peel and thinly slice the potatoes, onions and dice the green peppers.
  2. Add the entire oil to a frying pan and as it barely starts to smoke, add the onions.
  3. Stir for a minute and add the potatoes, followed by the peppers after a few more minutes.
  4. Let them all bubble and cook in the oil on medium high heat until cooked completely.
  5. Drip off excess oil and transfer the contents to a mixing bowl.
  6. Whisk the eggs with salt and add it to the fried vegetables and let the mix sit for a while.
  7. In the same pan, remove excess oil and slowly pour in the egg mixture.
  8. Cook the omelette mix on medium high heat until one side turns golden brown.
  9. Use a plate to flip and slide the omelette back into the pan and cook the other side.
  10. Insert a knife into the omelette and cook until it comes out clean.
  11. Once done, transfer the omelette to a plate with a paper towel to soak excess oil.
  12. Cut a slice of the omelette and serve warm with a sprinkle of salt on top.

Extras:

  1. Do not restrain in the amount of oil used to cook the potatoes and onions, as it stays clean and can be reused.
  2. The recipe can be enhanced by adding tomatoes and spices like garlic or cinnamon powder etc.
