Ingredients:
- Egg – 6 medium
- Potato – 3 large
- Onion – 2 large
- Green Peppers – 2 medium
- Oil – 6 tablespoon
- Salt – 1 tablespoon
Recipe:
- Clean, peel and thinly slice the potatoes, onions and dice the green peppers.
- Add the entire oil to a frying pan and as it barely starts to smoke, add the onions.
- Stir for a minute and add the potatoes, followed by the peppers after a few more minutes.
- Let them all bubble and cook in the oil on medium high heat until cooked completely.
- Drip off excess oil and transfer the contents to a mixing bowl.
- Whisk the eggs with salt and add it to the fried vegetables and let the mix sit for a while.
- In the same pan, remove excess oil and slowly pour in the egg mixture.
- Cook the omelette mix on medium high heat until one side turns golden brown.
- Use a plate to flip and slide the omelette back into the pan and cook the other side.
- Insert a knife into the omelette and cook until it comes out clean.
- Once done, transfer the omelette to a plate with a paper towel to soak excess oil.
- Cut a slice of the omelette and serve warm with a sprinkle of salt on top.
Extras:
- Do not restrain in the amount of oil used to cook the potatoes and onions, as it stays clean and can be reused.
- The recipe can be enhanced by adding tomatoes and spices like garlic or cinnamon powder etc.
