Ingredients:
- Chicken – 300 grams
- Egg – 1 medium
- Lemon – 1 small
- Ginger Garlic Paste – 2 teaspoon
- Bread Crumbs – 200 grams
- Corn Flour – 1 tablespoon
- Paprika – 1 tablespoon
- Oil – 3 tablespoon
- Butter – 1 tablespoon
- Salt – 2 teaspoon
Recipe:
- Wash the chicken thoroughly under running water and trim any bits of bone or fat.
- Prepare a marinade by mixing in lemon juice with corn flour, ginger garlic paste, salt and paprika.
- Add the chicken and coat it nicely with the semi-dry marinade.
- Whisk and add the egg in the end and mix it in well with all the pieces of chicken.
- Set aside the chicken and let it marinate for a couple of hours or even overnight.
- Spread the bread crumbs on an even surface and season it with some salt and paprika.
- Add the marinated pieces of chicken in to the crumbs and coat them thoroughly.
- Add oil of choice to a frying pan and let it smoke gently.
- Shake off any excess crumbs of the chicken and lay them away in the oil.
- Turn up the heat and let the breaded chicken fry for five minutes, flipping only once in between.
- Once the chicken is fried, take it out of the pan and let it rest on some paper towel to remove excess fat.
- In another pan, add butter and as it starts to froth, add the fried pieces of chicken.
- Toss the chicken in the butter on high heat for a minute to give it a nice crunch and a glossy finish.
- Transfer the chicken onto a plate and serve hot with ketchup and mayonnaise.
Extras:
- Chopped herbs like cilantro, dill, chives or parsley can be added to the crumbs for additional flavors.
- Squeeze over some lemon juice on the fried chicken to add a light citrus note to the taste.
